Oven Fried Chicken Recipe

This is borrowed from Oprah’s website with a few minor alterations on Patti Labelle’s recipe. There was no parsley available, which seems like a useless addition anyway so cilantro was substituted. Read below to create a healthy alternative to Southern Fried Chicken made..in the oven!

Servings: Makes 4 servings


Oven-Fried Chicken

  • 4 cups chicken broth
  • 4 halved chicken breasts , bone in, skin removed
  • 1 cup panko (or other seasoned bread crumbs)
  • 1 cup all-purpose flour
  • 1 tablespoon salt
  • 1/4 teaspoon cayenne pepper
  • 2 teaspoons dried oregano
  • 2 large cloves garlic , minced
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon freshly ground pepper
  • 1 cup nonfat yogurt


In a large bowl, combine chicken broth with 3 cups ice. Add chicken; chill 1 hour.

Meanwhile, in a resealable bag, combine bread crumbs, flour, salt, cayenne, oregano, garlic, parsley, and pepper; shake.

Preheat oven to 400°F. Coat a large baking sheet with vegetable or olive oil spray; set aside.

Place yogurt in a medium bowl. Remove chicken from broth. One piece at a time, dip chicken into yogurt, then place in bread crumb mixture and shake. Place breaded chicken on baking sheet. Spray tops of chicken with vegetable spray. Bake 45 to 50 minutes, until golden brown. Serve hot or at room temperature.

Shortly after winning his gold medal in speed skating, an NBC reporter asked Sven Kramer who he was and what he won. In reply, he said, “Are you stupid? I’m not gonna answer that.” Despite winning this medal, Kramer was unfounded in his comments to the reporter. The lack of politesse on behalf of this Olympic winner reflects a rude and pretentious individual. Even if he won this medal, to be honest, most have never heard his name.

He had just been named a Gold medalist in speed skating though and that is commendable but what kind of role model is he to look up to if he can’t keep a level head for something so trivial?

Indian Film Incites Rage Of Hindu Indians!

Shah Rukh Khan is one of the most well-known Indian celebrity in Bollywood. Last year, he was stopped at an American airport and interrogated for two hours because of his surname, Khan. The film, My Name Is Khan, which releases in theatres February 11th in India and February 12th here has Shah Rukh playing a Muslim who also deals with Asberger’s Syndrome who marries an Indian widow.

There must be something more to this film because Hindu Indians have begun rioting and defacing posters for the film. The aspect in which the film has chosen to portray Muslims seems to be the cause of the riots. However, among those opposed to the film, are those who say they didn’t mind the portrayal of Muslims.

The film attempts to change how Muslims are perceived. Yet, is it worth it to continue showing the film with enraged rioters and police being obliged to protect the theatres?

Alexander McQueen Dies Week After Mother’s Death

Alexander McQueen was found dead in his apartment today following the death of his mother the week before. It is speculated that his death was a suicide but there is no conclusive evidence and no foul play is suspected. The passing of Alexander McQueen has left a vast hole in the fashion industry as his revolutionary and seemingly theatre-inspired shows were the reason behind why the British fashion scene was revived.

Wanda Skyes Comments About NBC’s ”In Honour” Of Black History Month

Wanda Sykes discussed NBC’s Black History Month menu commenting that, “It is Black History Month, that’s how they celebrate. New York City, you don’t have to know about Harriet Tubman, here is chicken.” She has a point. If that is the only way they are celebrating, it doesn’t really ‘celebrate’ anything. Black History Month is meant to be a solemn reminder of the past whereas food doesn’t really remind anyone of anything except, well, food. It also presents a stereotype, in that, all black people care about is food and to be honest, who would want to be defined by the food they eat?

Michael Jackson’s former choreographer Travis Payne and dancers Daniel Celebre and Dres Reid went to Filipino, Philippines and taught the “Dancing Inmates” from Cebu Provincial Detention and Rehabilitation Center (CPDRC), a maximum security prison, dance moves from MJ’s This Is It tour for the song They Don’t Really Care About Us.

Beyoncé Becomes First Woman To Win 6 Grammys

Though most of the world has tired of Beyoncé, the Grammys committee decided to gift her with 6 Grammys. Congratulations, however chances are all that comes to anyone’s mind is Halo, which was not written by her (but well-sung) and the annoying Single Ladies, which for some was “empowering” but annoying. Every song Lady Gaga came out with last year on her album and its re-released version were amazing or at least, they were different enough to stand on their own as individual singles. Why was she forgotten?

Artists seem to be losing themselves in each other in that no one is able to differentiate between them nowadays. One catchy poppy tune is quickly replaced by another so it makes no sense that the Grammy committee votes blindly and decides to award artists of the industry with these generic and predictable sounds in their music. They support a narrow manufactured image consulting their own ‘professional’ opinions on what they assume to be the ‘best‘ albums of the year and it’s quite sad.

The Grammys for this year were a disappointment due to the mediocre musical performances and lack of excitability factor, more emphasis on the latter.

Grammy Album Of The Year Winner Taylor Swift Performing With Stevie Nicks

Lady Gaga should have won more than 2 Grammys especially if she has set a record by gaining five number 1 singles from a single album, something unprecedented.

However, even though most people would credit Taylor Swift’s success to Kanye West’s interruption of her MTV acceptance speech (and they would be right), she sold the most albums last year out of anyone, even Gaga. Yet, this is also thanks to Kayne West. Initially not many people seemed to know who she was before the ‘incident’ but now, everyone knows who she is.

In any case, tonight she performed with Stevie Nicks. Stevie Nicks was great while Taylor has a long way to go.

Tragic Grammys, Unoriginal Fashion And Gems

Oh there was failure all around in big red, garish packages except for Katy Perry who looked elegant with her beautiful bindi and Lady Gaga with her originality and faboosh (and 5 or 6 costume changes).

Pie Revenge On Peta In Newfoundland

In an unexpected turn of events, this particular PETA protester was sneakily cream-pied in the face just outside the hotel where Prime Minister Stephen Harper was scheduled to speak. The PETA protester was just saying before that people all over the world are disgusted with Canada when in fact, they aren’t.

PETA is protesting Seal Slaughter but what they fail to realize is that seals reproduce very quickly and the numbers need to be controlled. The problem with PETA is that they seem to not understand that if you do not control animal population, animals will reproduce and subsequently, overrun the cities with their increased numbers.

Perhaps, it is fine to say that every living animal is sacred in theory but realistically speaking, what would you do with animals running rampant throughout the streets? Would that not create problems?
